For lunch, which, let’s be honest, doesn’t usually get the same consideration as the evening meal, we settle. We turn to our everyday reliables—our solid staples, such as a favourite sandwich, a quick bowl of soup, or maybe a salad.
Their combinations are reliable, comforting, and easy.

Cottage cheese pancakes
Simple sweet or savoury pancakes not just for breakfast
My Tuesday lunch took a deliciously sweet turn after a detour via some soon-to-expire ingredients in my fridge.
A quick search for “cottage cheese recipes” and I’m cooking something new that I’ve never cooked before and it couldn’t be simpler.
Three ingredients: cottage cheese, oats, and eggs. That’s it.
But would a small stack of pancakes provide sufficient sustenance on a cold January day? I didn’t hold out much hope. I’m prepared to eat my words as well as my pancakes!

Ingredients:
Plain cottage cheese
Porridge oats
Eggs
To make:
Basically, it’s equal parts cottage cheese and porridge oats blended with egg to make a thick batter. Cook as small pancakes.
I’ve added blueberries, natural yoghurt, and some Alphonso mango & passion fruit coulis.
