I’m not sure if The Working Lunch is coming back. This could be a one off. But I just had to tell you about this sandwich.
If you were a regular reader, back in the day, you’ll know that I love a leftover. You’ll also know that I love a hands-off easy meal that does its thing in the slow cooker while you get on with work. This sandwich is the best of both.
Last night’s slow cooker Honey & Sriracha Chicken turns into today’s lunch.
For the Honey & Sriracha Chicken, check out the recipe here on Bored of Lunch’s Instagram. It’s a good one to get on at lunchtime when you’re working from home. I’ve also tried it with Chipotle instead of Sriracha, for more smoke, less spice — also delicious.
This time I had some leftovers, so I immediately went to a hot sandwich.
To assemble:
Fresh baguette, buttered
Baby leaf spinach
Shredded beetroot - the sweet & smoky one from Love Beets
Honey & sriracha chicken - reheated and shredded
Hot, spicy, sticky chicken with its lovely sweet burnt bits sandwiched into a fresh baguette — honestly. The beets give a nice sweetness to balance the heat of the sriracha, just watch out for the drips.
