Classic carrot & coriander soup
Cheap and cheerful
All hail the humble carrot. They go with everything — grated on salad, cubed in stews, roasted to go in houmous, or in so many different soup recipes…
This week, we’re going classic on the soup front. No messing about. Basic doesn’t mean boring. This feels a bit retro, but why mess with a classic. It’s a cheap, but most definitely cheerful combination of carrots with fragrant coriander.
On the work lunch front, a Sunday soup session gives you a few days of easy grace. Simply reheat when you’re ready for a comforting bowl of tasty lunch in a matter of minutes.
Ingredients
500g carrots, peeled/scrubbed and sliced
1 onion, diced
1 medium potato, peeled and cubed
1-1.5 litres of vegetable stock
Handful of fresh coriander, washed and roughly chopped
Oil
Salt & pepper
To make
Prepare the vegetables and sauté them in a little oil until they start to caramelise a little around the edges.
Add in the stock and let it simmer for 15-20 minutes or until the vegetables are all tender.
Take it off the heat. Add on the coriander and blend together, and season to taste.
Simple swaps
If you don’t have fresh coriander, ground would do just fine.
An optional swirl of yoghurt to serve, if you have some kicking around.
