Here we are a day later than usual, and it’ll be the same again next week and again later in May. As we (hopefully) have time off work to enjoy the bank holidays, I thought I might as well slide the newsletter one day to the right.
Do you mind if you have to eat the same thing every day or do you find it boring?
I once read on some food blog far away that the writer ate the same thing for breakfast every day simply because it was one less choice to make. The older I’m getting, the more I can relate to statements like that. If you minimise the choice, you alleviate the decisions.
When you’re interested in food, and not fussy or too restricted with your diet, the potential possibilities at every meal are endless or overwhelming. We might even go with a very basic choice for lunch because we can’t be bothered to decide or to make something more.
Aren’t we all just looking for a little more simplification on a daily basis to make the daily grind just a little lighter?
I’m pretty routine when it comes to my breakfast. Granola, yoghurt or kefir, berries, chia seeds. Repeat. I might mix it up with some peanut butter on toast. Crazy!
Meal prepping and batch cooking, it just makes sense for budgeting, planning, choosing - it’s all done. So, when it comes to that time of the day when your brain is slowing, your fingers are fumbling over the keyboard and your stomach is beginning to rumble, lunch is ready when you are.
Make ahead…
Smoky red lentil soup
Make. Heat. Eat. Repeat.
It turns out that I can very happily eat the same soup for four days on the bounce.
It’s delicious.
Gorgeous smoky depth of flavour from the paprika, creaminess from the coconut and a light freshness from the squeeze of lemon all wrapped around a very substantial bowl of soup.
I’ve made this recipe a fair few times this year but never in this quantity before.
Head to this link here Red Lentil Soup with Spinach to get the recipe. I highly recommend it.
Just a sandwich….
Hoisin chicken wrap
Wrap it up before you snack it up
Cooked chicken (could use leftovers from your Sunday roast) and some shop-bought hoisin sauce take an average wrap to a more interesting filling.
I’ve used chicken breast that I cooked the day before and reheated it. Add in a generous coating of hoisin sauce, some finely sliced cucumber and a few spring onions. Bundle it all up in a tortilla wrap with some salad leaves.

Brunch quesadilla
What to do with the rest of the wraps?… How about a bruch quesadilla. Read more on the TWL #25.
Thank you for reading The Working Lunch. It’s great to have you here. This post is public so feel free to share it.
That’s very true regardless breakfast! It would appear that we eat very similar breakfasts. I eat the same thing pretty much every day, bar the odd pastry 😬
Allegedly, Mark Zuckerberg wears jeans and a grey hoodie every day to work, therefore, removing the whole decision fatigue thing. I’ve also heard the same being said of people who buy a meal deal lunch; they pretty much buy the same thing. The shops clearly have the data on this, masquerading behind the “loyalty cards” 👌🏻
